¾ lb boneless chicken
2 med potatoes, peeled and cut into ¼ inch cubes
1 can (14 ½ oz) chicken broth
1 med onion, diced
1 med sweet red pepper, diced
1 med green pepper, diced
1 garlic clove, minced
1 T "The Best Hot Barbeque Sauce You'll Ever Taste"
3 T flour
3 T water
½ pound fully cooked smoked sausage, diced
Place chicken and sausage in greased dish. Cover and microwave on high for 5-7 minutes. Cut into cubes and set aside. Place potatoes and broth in 2 ½ qt bowl. Cover and microwave on high for 5 minutes. Add the onion, peppers and garlic. Cook for 5 minutes or until potatoes are tender. Stir in BBQ sauce.
In a small bowl, combine the flour and water until smooth. Add to the potato mixture. Cover and cook on high for 3 minutes or until thickened. Add chicken and sausage; cook 1-2 minutes longer or until thoroughly heated.
Yield: 6 servings
