Chicken Chicken Recipe
1 package boneless chicken
1/4 cup + 2 T flour
1/8 tsp pepper
1/4 tsp salt
4 T olive oil
1/2 cup minced onion
2 cloves garlic
1/4 tsp salt and pepper
1/3 cup white wine
1 T "The Best Barbeque Sauce You'll Ever Taste"
1 can chicken broth
1 tsp basil
1 can peeled tomatoesCut chicken into strips. Dredge in 1/4 cup flour, salt and pepper. Heat 2 T oil in skillet. Lightly brown chicken. In saucepan, heat remaining 2 T oil. Sauté onion, adding minced garlic at the last minute. Stir in the remaining 2 T flour. Cook for a minute or two then stir in wine, barbeque sauce and broth. Cook over medium heat until it thickens then add basil, thyme and drained tomatoes. Place chicken in a 2 quart baking dish and spoon sauce over the chicken. Cover with foil. Bake at 375 degrees for 45 minutes. Baste sauce over chicken during cooking. Spoon over chicken on rice.
